Domestic Goddess my arse!

These are the recipes I'm good at... quick, simple, out of the store-cupboard and onto the plate fare. I never spend more than 30 minutes faffing in the kitchen. So there.

This will be my recipe & homemadey remedy diary.

If you have those 'OMG! It's lunchtime and all I've got is a parsnip and a packet of boil in the bag rice.' moments, then you're a kindred spirit and you know that bad planning is often the mother of great food. So welcome to fast slurpy soups and 'really?' salads made from what's left in the fridge.


Never, ever believe there isn't something wonderful to make from the last 3 ingredients in your kitchen. Unless those ingredients really are fairy liquid, eggshells and dead flies.

Organic Spinach, Date & Courgette Salad

Good evening. Good Evening! I'm forced to wait another 15 minutes before the HUGE sweet potatoes have baked to perfection in the oven. Lets get one thing straight from the off - we can never be together if you consider microwaving any kind of spud acceptable.

Slow baked - with butter = heavenly supper without any effort. Right there - dollop on the hummus and off you go. No need to thank me.

So in fact - I have made a great salad to go with our super delicious sweet patooties.

Here's what you need to know - below...
In my fridge I found:

Organic Spinach (on spesh at the supermarket)
6inch chunk of courgette - cut into a julienne to be fancy
2 tiny orange peppers - also julienned for colour
2 tspns capers
@10 black olives marinaded in oil and herbs - chopped

From the pantry*:
A handful of pumpkin seeds
6 fat dates (not fresh - but fresh would work perfectly)
Good olive oil
Sea salt

Put a couple of big handfuls of spinach into two wide dishes, dress with olive oil and some caper vinegar and whole sea salt grains.

Now scatter the spinach with the rest of the ingredients, divided equally - or put more olives onto your dish if you're a piggy... what?!

When the potatoes are ready - divide them up and fill with your fave stuff.

For Him: butter, chorizo and goats cheese - oh my...
For Me: butter, chorizo and hummus - yummo!

Pop the spuds onto the salad - so the spinach will wilt a bit as you scoff the wonderful potatoes.

Remember to take more butter to the table and if you have my dear friend Kim over for supper - put the mayonnaise out too. I don't use it - but when I am at her house I pretty much clean the bottle out!

It's perfect with baked spuddy...

Weight watchers...
The buzzer has gone and I must plate up... No time to figure out the PP for this little beauty - but if you ditch the butter and use hummus and no chorizo - then you're really onto a winner.
