Domestic Goddess my arse!

These are the recipes I'm good at... quick, simple, out of the store-cupboard and onto the plate fare. I never spend more than 30 minutes faffing in the kitchen. So there.

This will be my recipe & homemadey remedy diary.

If you have those 'OMG! It's lunchtime and all I've got is a parsnip and a packet of boil in the bag rice.' moments, then you're a kindred spirit and you know that bad planning is often the mother of great food. So welcome to fast slurpy soups and 'really?' salads made from what's left in the fridge.

Never, ever believe there isn't something wonderful to make from the last 3 ingredients in your kitchen. Unless those ingredients really are fairy liquid, eggshells and dead flies.

Power Oats | The Breakfast of Queens...

I've been on a bit of a journey lately - and in my quest to pack my day with delicious and high value nutritious food, I've tweaked my beloved oats to deliver some serious extra 'ooomph'!

I promise you if you try this - you'll sail through your morning to lunchtime without one single snack machine drive by... Terrue!

There are a few ingredients in it that you might not have kicking around your kitchen, but you can get the lot at Holland and Barrett and if like me you prefer to buy a little more cheaply - then try online. I have a cupboard full to bursting with seeds, and nuts at 1/3 of the price of high street 'health food' outlets!

Delicious Gear You'll Need

1/3 cup organic oats
1/2 cup sun filled water*
2 apples juiced
1 tblspn chia seeds (Holland & Barrett or online)
2 tblspn ground seed mix (flax, sunflower, pumpkin & cashew)
1/2 narna sliced.

Optional Extras? | Hell Yeah!
Grated apple, blueberries, blackberries, strawberries - oh you get the idea - seasonal berries. Dried fruit, sultanas, dates etc. Toasted pine-nuts, seeds.

You can use milk or soy milk instead of the juice.
You can use other fruits to make the juice and you can add cucumber - it's lush!

You can add a teaspoon of hemp or linseed oil for some more omega whallop!

What to do with your lovely, organic bits and bobses.

Juice the apples. Pour 1/3 cup of juice and 2/3 water over the oats, chia seeds & seed mix. I put mine into the microwave for 2 mins. (You can add more juice/water if you like a less sticky porridge - I like mine so thick you could build a wall with it at a pinch).

If you don't want to use a microwave then leave out the chia seeds & ground seeds and put the oats, juice & water on the hob and cook as normal. Then stir in the chia and ground seeds at the end.

Add chopped narna, or any other fruit you like. You can also add yogurt and some more un-ground seeds for crunch.

You can also add the pulp from the juice of your apples to your porridge. This is a brilliant way to use it up!

Bonus Drink!

I add 2/3 cup of soy milk to the rest of my juiced apples & drink this with my porridge & a cup of roodibosch tea with almond milk.

The soy has phyto-estrogens in it which are useful for women of a certain age. The flax & hemp are also helpful, as are the mixed, ground seeds.

This tastes lovely and creamy. I don't really like soy milk - so it's an excellent way for me to get some in every morning.

*Finally a note on Sun Filled Water!
The sun has been used to purify water for a long old time. I put two pints of water from the tap onto my window sill and let the sunshine (!) hit it. I like to think of it as drinking sunshine. Whatever you think - if you try it, I reckon you will taste a difference.

I also don't dig on the freezy cold water into my gut first thing. I doubt it's detrimental to my digestion - I just don't like it. I prefer a cup of hot water and lemon juice - then a glass of sunshine water!

LOVE x

  1. How long do you have to leave the water on the windowsill for it to be sun-kissed? I like my water cold, but love the idea of drinking sunshine... So glad I eventually found your blog!
